Pits can turn it off as easy as any other dog, and more easily than many terriers and the like. The status you're using are also wrong - pits do NOT lead the dog bite fatalities list, even IF people could be trusted to accurately report breed, which is so untrue (they can't identify or report)...
Definitely understand how Rabbitosis happens. Waiting on these guys to be ready to go has made me want to pick up EVERY RABBIT I SEE. I'm down to < 3 weeks wait, though, which is nice. I may possibly vibrate out of my chair day of. Definitely will flood the internet with pictures.

I'd go Rex, I think. Pelts/furs don't go for very much UNLESS they're rex, and I've heard nothing but good things about them as meat rabbits.
That said, more experienced folks will likely have way, way more varied and useful information.
I have seen positive changes in does who were spayed - big ones.
I think it's important to remember that sometimes a rabbit who is perfectly sweet when being bred and raising kits can get, um, frustrated when intact and not doing those things, so the breeders may never see those changes, even...

Yup. Unlimited hay, small amount of pellets, and my guy actually gets greens (not iceberg, but kale, romaine, parsley, cilantro, spinach, etc) in fairly good quality. Odd crasin or bit of apple, but mostly:
Grass Hay and pellets.
As someone who only keeps house rabbits/pets, the idea that they're neater with more space is dead wrong. Rabbits use poop to mark territory. When they're in a confined space they know its their territory and stick to a potty corner. Given a large area, they poop all over it to keep marking...
