I just get all the meat I can get off the bone. Run it through the meat grinder, then I mix in jerky cure and my choise of seasoning---Put mixture into jerky gun and "shoot" it onto the dehydrater trays and dehydrate.

Thank you for this. I never knew there was such a thing as a jerky gun. I just watched a video of one and thought it was pretty darn neat.

No, you cook it before you add water. Just melt some bacon grease or something in the pan, add the rice, and stir until brown, then add your water to cook it. :) Nice flavor!

I grind and use the jerky gun on every type of meat that I make jerky out of. When you put a piece of jerky made this way into your mouth it is easier to "eat" than sliced expecially if you have any false teeth----LOL.

Also I can get a better Mix of seasoning into the meat. I grow, dry and grind several different types of pepper just to mix into my jerky meat----Love It!! Try this--- 1 lb of ground lean meat, add jerky cure and seasoning---then add 1 heaping table spoon of dried habanero pepper---mix with Gloves on---dehydrate---offer to the Tough Guy who Loves Hot Pepper----I put two heaping table spoons into 1 lb one time and made a couple Hot pepper guys cry and grab a cold drink----LOL----I warned them--it was HOT!

If I eat any habanero's... I would never have to worry about hermroids again!!! LOL!!! :explode: :explode: :explode: :-x :p
 
I put all the bellies into a Ziploc bag with two tablespoons sugar, four tablespoons good soysauce, one tablespoon realy good apple cider vinegar and a generous shake of ginger and garlic.

Then I shake the bag about once every hour or so for the day, place onto racks in the oven at 170f until they are chewy. About an hour is all it takes.

I also take that sauce that now has all the lovely rabbit juices and bring it to a quick boil in a frying pan to pour over hot buttered pasta.

One thing I have discovered, the bellies from older rabbits are quite fatty done this way, its much better with fryers.

I have been told That I must be the Fire-Man for So Many Reasons----Some from my single days that I will not Mention on this Forum. I got the "Name" when I was a Fire-Fighter and put a CB in my Truck----everyone called me the Fireman. Years later when I quit with the fire fighting I still had a CB and I also sale and repair CB's so I changed how you say my "Handle" from Fireman to Fire-Man---Every one said that I make the CB's Talk so much better because I Put Some "FIRE" In The Wire. Now, You can call me Fire-Man because I make Hot Jerky---LOL.

Who were you talking to, and what about? I'm confused.
 
Jerky, as in beef jerky is a native Indian recipe that we liked and we continued.
It was a natural way of preserving meat with no refrigeration.
So on that basis any major deviation is by me not jerky but dehydrated ground meat.
