Not sure yet, but my goal is rabbit for dinner twice a week or so and my family of 5 will eat 2-3 fryers for a meal, depending on what I make.
 
I'm not quite sure either. Most of my rabbits are processed well past fryer age, so one rabbit will usually make two meals for my family of five.

However, we have recently been packaging them differently- a bunch of thighs in one bag, "wings" in another, etc.

We go through phases, but usually have two rabbit meals per week.
 
At full production, which I'm just getting back to after our move, over 100. Three adults and two kids who eat like adults. :D

This is one rabbit per meal, twice a week.

Like MSD, our rabbits tend to be processed past fryer age, so one rabbit is enough for us all. I've been wanting to bag up parts, but haven't done it yet. We are going to be cutting off the belly flaps to make jerky, though. :)
 
So we do not know for sure.
We have 2 per month but ramping up to have one a week by the end of the yr.
 
So far, about three or four times a month with usually two rabbits per dinner.

With 6 litters due this month, we might be eating a bit more soon :p

I have started bagging the "tenders" in a separate bag to use as I would a chicken breast. I am also saving my belly flaps for jerky. My kid can hardly wait to make it, but we still have 5 fryers to process.
 
We eat rabbit bog about two to three meals per week, fry some about once a month. Those of you that have never tried rabbit bog----Should!!
 
okay, what is rabbit bog? Sounds swampy. :p

It really should not be called a "Bog" because its dry, but could be wet---I like dry, flaky rice not gouie, soupy rice. We boil/cook the rabbit in the crook pot till tender. Debone the meat and put it in a pot, If were are going to cook say 2 cups of rice we put 4 cups of broth from the crook pot in with the dry rice and meat. We love hillshire smoked sausage so we slice/dice up a pack of it and add to that pot. Season to your likens---we use a good size onion diced/sliced up. Bring to a boil then turn down the burner as low as possible---in about 5 minutes stir the pot and then DO NOT STIR ANY MORE----let it slow cook till rice is done.
 
I bring home smoked sausage from work all the time. I will have to try this next time. Sounds easy breezy.
 
One thing you can do, that we do when we make jambalaya, is brown the rice first. Melt some butter or bacon grease in the pot you're going to use, put your rice in, and stir almost constantly until rice is coated. Continue stirring and turning the rice until it is as brown as you would like for it to be.

Then add your broth and everything else, and proceed as usual. :p

It adds another dimension of flavor... a nutty flavor, almost.
 
That sounds nice! We do something similar but I make stock from the ribs of the batch of rabbits - I bag bits now instead of whole buns - and then put three cups of stock, one cup rice, two cups frozen stir fry veggies and about 8 rabbit bits into a casserole dish and cook on 350 for a couple of hours.

Yum!

And rabbit belly jerky is sublime :cool:
 
Slightly frozen meat to slice nice and easy in strips.
Marinated in a bowl with vinegar/vine/beer/pepper/garlic/chile/sage/thyme/... any spice combination one likes for 24 hrs.
Place in the smoker to dry and smoke using desired wood for flavor.
 
Be vary careful.
High quality jerky can be very addictive.
No scientific study that I know but from personal experience.

I just get all the meat I can get off the bone. Run it through the meat grinder, then I mix in jerky cure and my choise of seasoning---Put mixture into jerky gun and "shoot" it onto the dehydrater trays and dehydrate.
