For Stir Fry, I soaked the deboned rabbit in corn starch water for about half an hour and then poached it before the stir fry part and it was melt-in-your-mouth tender :p

I also use the tenderloins (saddle) for bunny alfredo and do it the same way ... cut the tenderloins into medallions, soak them, then poach in a bit of water before adding the alfredo sauce.

My favorite is to crock pot the whole carcass with oregano, garlic salt, and onion powder, then pull the carcass to cool and throw the egg noodles in. After the meat has cooled enough to handle, debone and throw back into the pot, add several cups of milk and let it simmer for another 15 minutes. Almost like grandmas home made chicken noodle soup LOL

I also crock pot a whole rabbit for making Rabbit Salad in the summer for a cool summer sandwich :D
 
Two front legs in a cast iron frying pan, heaps of powdered garlic, salt to taste, a table spoon of oil and enough water to cover. Simmer on mid high till water is gone leaving pan juices and oil and fry gently till brown.

Then just eat.

And make sure all children are playing OUTSIDE so you can eat in peace and not have to share!

You do now. Years ago, all I had to do was show my driver's license and away I went, into the land of hockey and maple syrup (no offense, neighbors ;) )... Now, you have to have a passport for a land border crossing. My plan is to try combining the rabbit meat and bacon and running them through my grinder together with seasonings and onion and garlic to make bunny burgers...
