Hi everyone.
Name is Michael. My wife name is Judy. We used to have an of grid homestead back in Idaho in the early 2000's. Once our children were all grown, we set it to explore, leaving it all behind for an RV life.
Fast forward about ten years and we are now retired and settled down in northern Arizona. We bought raw land again, far from utilities and are rebuilding a new homestead. Part of a homestead is animals. I am unsure if we have the energy for large animals again, but chickens and rabbits we should be able to handle.
We raised Satin, Champagnes, Rex and Beverens before. We think we will just go small with our first love, Satins.
Have a ways to go to get there, but this forum is a start. I am hopeful people are friendly here. Society as a whole has turned pretty mean in the past ten years and we look forward to friendly people again.
 
Love to hear about another off grid adventurer. My husband and I are up in BC off grid, no services. It’s harder than city life but freedom is worth so much more than running water isn’t it. Well I’m sure we will have water into the cabin one day but not yet. Welcome to the forum.

I'm quite familiar with the area you chose. I live here myself.
Don't write off large animals just yet. Specifically horses. I hope not, but there may come a time in the very near future where they would be a necessity.
In many cases you can get them for free. Especially now as too many can't afford to care for them.
Besides transportation, when nothing else is available, they are also excellent tractors for farming.
With your knowledge & previous experience you could make an excellent living just growing hay.
Your horses would do most of the work and feed themselves while doing it.
