"IT"has finally arrived. :p :p

They say that "good things come to those that wait"....Maybe so..
BUT.....It sure took a long time coming...LOL...
My rabbitry and the product I provide is going to be the "Focal-Point"
of a private banquet by invitation only to the top chefs around the Midwest
this upcoming Thursday afternoon.

In addition, the sponsor of the banquet appeared on morning television
and kindly mentioned my name and my rabbitry. It's part of the movement
to use and consume locally produced goods. He's been using my product
in his restaurant for quite a long time and is completely satisfied with
what I provide.

I'm scrambling to fill a 65 piece order by Wednesday afternoon. I was
almost "there" when my buyer called in an order for 21 fryers that have
been sold in addition to the banquet. 86 head of fryers is a lot when
processed to the specifications most chefs demand. I haven't had a
single complaint from any of the eateries I sell to.

Considering I've entertained several out-of-town buyers for
breeding stock, it's been a blur of non-stop activity this past week.
35 head of brood-stock to three separate buyers. Cha-Ching!! LOL.
Add the 86 head of processed fryers and the Cha-Ching!!!! GROWS.

Once all of the smoke clears and I can tally the totals... I'm sure
I'll be having the most profitable week in my life with my rabbitry.
Of course...it only took in excess of 40 years...but hey, who's counting.
This is the first time I've stopped since 4:30 this morning....
My butt's draggin' my tracks out...... :x :x :x

Congrats Grumpy!! That would be amazing to be where you're at now!!

I've watched your processing video time and time again, but there's still something I'm missing, although, today was my first time at processing.

Once again, I congratulate you and thank you for all you do for us at RT!!
 
Made a BIG boo-boo....LOL.

My delivery is on Thursday.....The "Banquet" will be on Friday
or Saturday.

That's what happens when I get too "Happy" :x :x

Thanks for all of the positive support. Once the delivery is made,
we're off to have a late lunch at another restaurant that will be
coming on line as one of our customer's. All of the chef's want to
meet 'yours-truly' and come for a visit when they're free for a
period of time.

I've had two different groups out for a visit since this has all began.
I was as nervous as a long-tailed cat in room full of rockin' chairs
the first time, but soon realized my guests had absolutely no idea
of what they were looking at. They just thought everything was 'so-cool.'

I shouldn't even be taking the time to relay my appreciation, LOL.
I've still got 20+ head to process and get into the freezer before
tomorrow evening. I can usually do 6 head an hour, start to finish.
But, packaging for the restaurant trade is an animal of a different
color. EVERYTHING....has to be absolutely perfect.

Small nuances in appearance concerning all aspects are critical.
The hind-legs MUST have a clean, nearly pristine hock-joint exposed.
The small gristle flap near the diaphragm must be removed with scissors.
Front legs must be evenly cut with a flat surface. Nearly all
traces of blood must be gone. NO HAIR...or at least darned little.
The list goes on and on to the point of "maybe" 2+head per hour.

I've yet to receive a single complaint with over 250 head sold thus far.

Headed to the barn folks....some "midnight-oil" will be burned, I'm sure.

You're obviously not afraid of hard work!

Don't know how many times I've heard people say, "You can't make money raising rabbits!" We'll have to rename you Sir Grumpy!!!

So glad it's paying off for you. And sounds like it's going to be more than a "flash in the pan". :chef: :dinner: :chef:

Congratulations! I am thrilled you're making so much progress with getting rabbit onto more plates than just our own! Sir Grumpy indeed :)

Let's hope your local food movement spreads. There is a big push for local foods here, as well. But it doesn't include rabbit meat ... yet! I wish you continued success. You are da Man! Let me know when you get ready to open an operation in Virginia. :idea:
