I lived in Canada for about seven years. You can guess my stance on real maple syrup versus that watery, runny crap. You get three guesses and the first two don't count. ;)

I'm also evil. :twisted: Once in a while when I'm visiting friends and family in Ontario, I buy the "good stuff" and bring it home...and gift it to a friend or relative here in the states.

AND THEN THEY CAN NEVER GO BACK TO THE CHEAP WATERY CRAP AGAIN. :twisted: :mrgreen: I'm so bad!!!!

On the upside, when I'm at my dad's for breakfast, there's honest-to-gods REAL SYRUP on the table. I corrupted him early on. ;) Day before yesterday he was griping about the price of maple syrup and I was like "JEEZ DAD, you bought A grade, OF COURSE it's gonna be pricey!!!" I'll gladly settle for a lower grade so long as it's the real deal...but my dad read somewhere online that the darker grades are darker because they are harvested later, and the darkness is caused by dead insects in the wood. :eek: Personally I don't care, there are no WHOLE BUGS in the syrup so who cares if it's a little less clear? But my dad has a 'THING' about bugs, so...now I get A grade premium gold at his house. :mrgreen:

Goin' over to his house tomorrow to help with some chores...and breakfast is included. He informed me I get no pancakes for a while though, alas!!! Syrup conservation and all. ;)
 
I think the darker grades have a fuller flavor.

Maybe it's the bugs... :twisted:

that recipe looks incredible! You can bet that will be on the breakfast/brunch menu soon! :p Of course, pics will be posted at that time- if I can restrain myself from diving headlong into my plate, that is!
