Interesting info so I checked a rabbit genetics calculator & all possibilities & it came up with a 1% chance of REW? I got 2. Those are very low odds out of a litter of 8. Very neat though.

If you got REW you have 2 breeders carrying REW. they each have a 50/50 chance of giving each kit one copy of REW. If a kit has 2 copies they will be REW (one from each parent). if they have one copy they will carry it and you will never know.

From this breeding you can consistently expect 25% non-carriers, 50% carriers, and 25% REW. To put that another way, you will get 75% colored kits, and 25% albino kits from this cross. 2 out of 8 is exactly that expected ratio.

I think the 1% odds would have been calculated out of their pedigrees, maybe you had a 1% chance of getting 2 rabbits who carry REW? However, now that this is confirmed you will get 25% kits which are REW, fairly consistently. Some litters will have slightly more, some will have slightly less, but it will average 25% REW
