Just put a fairly fresh dispatch in a sugar, salt, thyme and rosemary brine. Going to smoke it tomorrow after adding a garlic/thyme rub. I'll let ya know. Have to use my weber grill and am smoke it whole. If I get tired of feeding the coals I'll finish it in the crock pot. Let ya know.
