It's not easy to see dimensions but that's a 1' high by 3' long pile of carrots


That's half what the person planted, I left her the other half, and I have no idea what to do with them. The site I decided to go with said pull off greenery, set in the sun for 24hrs, and then store on paper in the crisper drawer keeping as dry as possible and they would keep for 4-6months. My first 3 were rubber carrots after a few days so I chopped them up and froze them for soup carrots. Better ideas short of canning which I'm not prepared to do this year?
 
Josh was going to talk to his parents about the one they don't seem to use anymore but they are over an hour away now so we won't see them soon. I could annoy him that we need one immediately. I'd rather annoy him to get me an expresso machine though. :lol:
 
I'm thinking I'm just going to cut them up and freeze them. Apparently the garden forum thinks the carrots should have stayed for another 2 months to mature enough for storage but the person that planted them said they were done. We don't use carrot raw anyway. We put it in soup or curry. I'm just wondering now if I need to peel them before cutting and blanching.
 
DH picks... and scrubs the dirt off the carrots for me.

I cut off tops, peel... chunk ( about 1" pieces)... blanch for 3 minutes... Cool quickly... then put desired amounts in freezer bags...and freeze until we want them.

The peeling takes the longest . :p But they are quite good when cooked.

I have been told to definitely peel... as the outer layer may have not so nice bacteria from the ground...ymmv of course. :)
