I tried to debone one like in the video... NOT as easy as he makes it look! It took me about 30 minutes and didn't turn out nearly as good. I think next time I will skip the ribcage and just cut that whole section out with the meat on the bones to use for stock, rather than trying to debone it. The rest of it was doable with some practice, but that ribcage was tricky!
 
We cut down each side of the spine, and then pulled and cut several times to remove the meat from the top of the ribs. We left the meat between the ribs for the dogs to enjoy. I also decided the shoulders weren't work the effort of deboning, but they should be excellent for stew, soup or stock.
