just an opinion, i have heard that flemish giants are not the greatest meat rabbits because there bone vs. meat ratio is not so great. they have big thick bones that take up space that could otherwise be occupied by meat. the new Zs and calis have better bone to meat ratios. perhaps you could try satins instead of giants? *wink wink* just thought i'd throw that out there.
