I really don't enjoy eating the flaps of skin/tissue from around the abdomen (that get tough). It turns out with just a few snips of the scisors they make the perfect thin, flat jerky ![Smile :) :)](data:image/gif;base64,R0lGODlhAQABAIAAAAAAAP///yH5BAEAAAAALAAAAAABAAEAAAIBRAA7)
I'm still in search of the perfect marinade, but the texture of the jerky after 12 hours in the dehydrator was perfect. The bonus? My kids liked it... a lot. The down side? You only get 2 pieces of jerky per rabbit.
