its not rabbit related so i put this here instead of rabbit recipes. mods feel free to move it if its better in that section though.

my first time ever making yogurt so i took pics at every step and now i'll share with y'all how it went!

measure raw goat milk




pour into pot. heat to 100*F




put starter culture (yogurt with live culture in it) in jar




pour warm milk into jar. stir milk and culture gently but thoroughly.




lid on jar




put in pot. fill with hot water (110-120*F) to just below brim of jar lid. put lid on big pot. set on layers of towels.




cover/wrap with blankets. i used 2 thick fleece blankets. every 2 hours i dumped water and added new hot water and rewrapped in blankets. {i put mine in the tub so i knew it wouldnt get knocked over by anyone}




after 8 hrs "incubating"






after 8 more hrs (total 16.5 hours incubating) and about 2hrs in the fridge. thick enough that spoon sinks very slowly. still kinda runny though. i didnt add any thickeners or sweeteners though.






its real tart. i think its from incubating so long makes it more tart. next time i will be trying it with more milk, incubating in a cooler with hot water, adding honey for sweetness, possibly adding gelatin or do half goat milk and half store cow milk (for thicker yogurt). and probably do it all right before bed so i'm not thinkin about it the whole 8 hrs and going nuts over if it will turn out or not.

you could put some on a spoon and scoop some yogurt on the spoon, thats what I do with plain yogurt.

oh, and have you ever made cheese?

For thicker yogurt add 1/2 cup powdered milk per quart of milk you use.
What kind of goats do you have? We have mini nubians. :)
 
Yum!! I haven't made any from goats' milk, but I have made it from raw cows' milk.
 
yes i make cheese. lol i have about 11 pounds of cheese, 3 pounds of butter, 2 gal "skim" milk (still better then store "whole" milk), 8 gal raw milk, and soon to be less milk and more yogurt! hahaha of course i had to make more since it was a success!

oh and it got thicker in the fridge! just needed to set up. it was kinda chunky but i used the mixer on it and now its nice and smooth. yumm.

i have two saanens. trading their babies for 4 alpacas! :p
i didnt use any thickeners in it. i want to make it without anything like powdered milk. i dont think i'll try the gelatin since this turned out fine in the end.

though i'm about to wash out the big cooler to do the incubating this time. i shouldnt need to switch out hot water this way and be able to fit more at once.

Yummm cheese! :D We haven't made any yet the babies are still getting alot of the milk. Oooow can't wait! :)
 
thanks. amysmacdog do you have anything in mind of how you will be making cheese when the time comes to try your hand at it? i know alot of people use cultures and things but i've never done that. i dont even use rennet. lol. just milk and vinegar.
 
Cool! Haven't tried the vinegar yet but have used rennet, cultures and buttermilk. So far Ive made cottage cheese and chevre. :) Mmmmmm.
 
That's neat! I think regular yogurt is gross but if ya add fruity stuff like yoplait blueberry (whatever they do to that it tastes good) isn't it cool what micro organisms can do for us!

Do you drink raw goats milk or do you have to pasteurize it?

i get alot more milk then that now though hahaha. then i just put it in the fridge and use it up. no pasturizing here. i wont ramble on about benefits of raw milk *blushes* i can get on a rant with that topic lol.

i'm finding tons of awesome recipes using yogurt! cheesecake, frozen yogurt, cherry cheesecake frozen yogurt, yogurt cake, yogurt cookies, yogurt cheese,.... SO MANY USES!!! i have no idea how i lived making all this milk into cheese this whole time when i could have had all this amazingness!
if anyone is interested i'll post links to the recipes.

i have just over a gallon in the works right now :mrgreen:
 
Excellent, OGG!

I think you should watch in the thrift shops for one of those Donvier ice cream freezers. They are expensive new, but people seem to buy them, use them a few times and then get tired of them. They work great and just think of frozen yogourt with blackberries this summer!

looks neat maggiej i was lookin up all kinds of recipes for using yogurt last night... found a recipe for "cherry cheesecake frozen yogurt" *drool*

1 (8 ounce) package cream cheese, softened

1 cupwhite sugar

1 tablespoon lemon juice

3 cupsplain Greek yogurt

2 cupspitted, chopped fresh cherries

In a large bowl, mash the cream cheese with sugar until thoroughly combined; stir in the lemon juice, and mix in the yogurt, about a cup at a time, until the mixture is smooth and creamy. Mix in the cherries. Cover the bowl with plastic wrap, and chill until very cold, at least 4 hours.

freeze until reaches desired firmness.
 
well i'm attempting to fix some of the yogurt from last night. and using some to try the cheesecake frozen yogurt (minus cherries cause i dont have any lol). so have to see how it comes out. the cream cheese was close to its date so it wont be too much of a loss other then time.

i had done it differently the second time (last night). actually the way i did it the first time was only ONE place with doing it that way... the second time i did it the way basically all the other places said to do it... *rolls eyes* go figure!

gonna wash jars and try some tomorrow the way i did it the first time.

Also always wanted to ask, do their teets get sensitive and stuff like people or are things just dandy as a flower? And how often do you milk a single dairy goat, or does it just depend on them?

haha well this could become a long thread if i get goin on raw milk :lol: i'll dig up some links and stuff though. try to contain myself lol.

{ugh i typed all this out and it deleted itself! :evil: here goes again...}

as far as teats and milking it only gets sore if you milk really fast and it irritates the orifice that the milk comes out of. my dad always explained it like on a roadtrip and you hold it a really long time cause there's no place to stop, and when you finally stop somewhere it kinda hurts when you pee because you pee too fast.... { :roll: yes i've got an odd family lol}

or if you dont close off the teat all the way when you're milkin, when you squeeze it shoots milk back up into the udder and irritates the tissues in the udder. if you do it alot then the tissues get real irritated and bleed. this makes pink milk, blood in the milk making it pink. which you also dont want because the only thing its good for is givin the cats/dogs. but i cant really say how much it hurts the goat because, at least in my experience, some goats will stand there the whole time someones milkin wrong and you get real dark pink milk and they dont seem to notice, and others will flinch or stomp or even kick if you milk wrong or too fast.<br /><br />__________ Thu Apr 18, 2013 9:43 am __________<br /><br />also, as to milking, its easier on the moms to milk them then to have the baby/ies on them because the babies are pretty tough on the udder and teats. they bite on the teats and *** at the udder to find the teat and when they are being greedy they *** to get more milk. though when handmilkin you can take advantage of this trait and when you are almost done milkin, massage the udder to get a bit more milk. my dad says he can get an extra cup of milk from each goat doing that.

as far as milking times.. i milk at 8AM and 8PM. my neighbor who has dairy cows milks at 6AM and 6PM, but they are grade A and all and the milk truck comes at 8AM every day so they have to be done milkin and ready for the truck to pick up the milk.
you can milk once a day but you tend to get the most with twice a day. and some people who dont want to bottle feed will put the moms in the barn at night and take the babies and put them in another section of the barn. then in the morning the moms have milk stored up from all night and you milk out, then let out moms and babies together. so the babies can nurse from mom all day. and you get milk and not the extra work of bottle feeding.
which take it from someone who's family had 7 milk goats meaning up to 20 babies to bottle feed. three times a day (8AM, noon, 8PM) for the first 3wks, then twice a day(8am/pm) for two weeks, then bucket train about two weeks (8am/pm). and my family used to breed for kidding in jan/feb or feb/march and here february is the worst winter month. once we had over a foot of snow with almost inch of ice on top. me and my sisters would see who could take the most steps before the ice broke and you fell in the snow. which is also even more somethin to see with the hills we have!

To explain what you said :).

I think I understood you milk twice per day and they still produce enough milk for the kids. Hope I got that right. And that they must be milked twice a day to prevent overload of milk within the utter?

We had Thick ice over snow once here. It was so cool I did the same thing! Then I dug th snow out from under the ice to see how long it would hold up. Lol isn't nature amazing sometimes!

no problem mostly i was just mad because i wouldnt be able to retype it as good the second time /:

no they way my family has always done it is the goat kids(give birth) and mom and baby/ies go into a kidding pen in the barn. first 3 days after birth they stay together in the barn. the fourth day mom goes back to regular barn abd pasture and gets milked and baby gets bottle fed.
we keep em together the first three days to be sure the kid(s) can get all the colostrum they want at any time. colostrum in goats is mainly the first three days, though can stick around as long as a week. though as long as i can remember its about gone by the fifth day.
when we start milking the moms a good part of that milk goes to bottle feeding the babies. but after longer time you start watering down the milk and giving them feed and hay. so more for drinking and all.

if you pull off the babies then you will have to milk or else the mom will get mastitis. like rabbits can get. in goats and sheep if left unchecked it can get to where the udder can get so bad that they wont be able to produce milk on one side or the whole udder.

i think every goat is different. really i think thats why they are so commonly hated. they are just like people! hahahaha! each one has different attitude and personality and quirks.
