I have heard (that unlike beef fat) rabbit fat, does not taste good. How much fat, do you leave? Can it be rendered, like beef fat? Could you use it like tallow? Are you feeding grains or pellets, that the fat tastes alright?

I feed pellets and hay and what ever I happen to pull up on the way to the fryer cages so most of the fat I find is in the belly around the kidneys and along the belly meat. As that gets turned into jerky I pull the fat off from there but it goes into the bag with the rest of the meat so it doesn't get wasted.

It tastes nice to me but unless you get one like the OP you will never get enough to render. A normal amount of fat for our rabbits is about two tablespoons.
 
When I was feeding pellets, I found much more fat on the rabbits than on natural feed... And I did not much like the taste. On natural feed, all the rabbit fat (which as GBov noted is not very much) is used. It has a pleasant flavour. The fat around the kidneys is used to saute the giblets. The rest of it goes into the soup pot. I debone and cube the meat from hind legs and loins. The rib cages, front legs, surplus bones and sometimes the belly flaps go for rabbit pie and/or rabbit soup. We don't waste much... and to me, excess fat indicates a waste of feed or a health problem with the individual rabbit.

That is one FAT rabbit there, I hope you didn't pay by the pound lol. I will admit I have seen a chunky doe from time to time but that is almost disgusting imho.
