My family bred Rex for about 8 years and even I could never really spot the difference lol they look so similarThe easiest way I've found to tell an amber from a lighter castor is to look at the ear lacing - it will be black in castors and chocolate in ambers. Your bunnies have black ear lacing, hence castors.
Do your rabbits have red in the background? Reds carry two copies the wideband gene <ww>. In my experience, castors or coppers that carry the wideband gene <w> often look redder (lghter black ticking) than their non-wideband siblings. This makes sense since the wideband gene stretches the middle red ring further up the hairshaft, leaving less space for the black tip.
