So last month I decided to make some breakfast sausage. I normally butcher the buns at 5 lbs. which gets me about 3.5 lbs. of meat per bun. I like to make batches of 25 lbs. and got to thinking how many buns would I need to butcher for 15 lbs. of meat. I decided instead of butchering the buns I waited an extra month and now they weigh 7-8 lbs. and there are 4 that will be butchered Saturday.
 
That is awesome, I always assumed it was with the bone. Thanks for clearing that up for me. I love sausage so your idea sounds great. If only I could convince my wife and daughter about the benefit of meat rabbits. My daughter will leave for college in 1.5 years so that gives me some time to work on my lovely wife.
 
I use the older rabbits for sausage, the 7-10 lbd ones, even worn out breeders. It's ground so, with the old breeders I just take it to a finer grind to make sure it comes out tender enough for good sausage.

If you have a jerky gun, rabbit makes great jerky too (the chopped and formed kind is all I do - it's easier to eat with my dentures. :)

Ckcs whereabouts in Va are ya? I know at least one other person here is in Va maybe someone could set ya up with a meat rabbit and good simple recipe to take home? Lol when i made my first abbit meal i was cookin for me and dad and my two younger sisters (12 & 15 yrs at the time, very girly girls) and i decided to do rabbit and another main dish. So they could eat whichever and not go hungry or have reason to complain. It turned out good and half of it was eaten and my sisters even started a conversation on how it compares to other foods. The next day i used the deboned leftovers and broth from slow roasting it into "bunny noodle soup" and it was gobbled down faster than the roasted.

Gloucester, VA. Wife and daughter would kill me if I cooked a rabbit right now. They will need some more work. Although I am more comfortable with the idea, they can't get past them being pets. Even though I have shared their views more in the past, I've always thought it made a lot of sense to raise your own meat. Seems a lot better than eating frankenmeat from Walmart. I still have hope of converting them.

Ya the more i watch the documentaries on food the more i feel the need to be self sufficient . Have yall watched any on monsanto or pesticides or anything? Pretty scary once ya get into it. Rats on gmo become infertile in three generations, and how short is a rat generation!!?! Cancer, allergies, birth defects, infertility,...
The Usa has highest allowed pus tolerance in the milk for the whole world! Because the cows are such heavy producers and the milk machines on their teats cause sores and after a bit the sores bust during milking and it gets sucked through with the milk.

You can't believe everything about the sores on the teats and the pus getting in the milk. I come from a family of milk producers and when the cows have sores on their teats they were always doctored and the milk from that teat was milked of into a can and fed to the baby calves, dogs and cats. It never made it to the tank or to market.

If thats true then I wanna buy a ton of that GMO corn to feed to the rats around here....

-- you can't believe a lot of what those "documentaries " tell you, -- they are made using the worst situation they can find, and then sometimes "factually enhanced" The only time milking machines make sores on the teats , or cause mastitus, is if the vacume and pulse timmer is not right, if the equipment is working right it is easier on them then hand milking [I have done both] - the main cause of sores on teats in a dairy is too large an udder and the cows step on them or get them bumped on, or dragged across things, next is sanitation. I have worked on some wonderful daries with great pasture, good equipment, and clean environment, --and also worked at some terrible places. ---I have nothing to say in defence of Monsanto--

I dont believe wverythin in the to a t.. but i do know about the sores and all. Back home the neighbor has a small herd and they have the full setup and sell the milk. I have been there many times to watch and help. I know alot of good people will take care of them but with hundred head of cows i dont believe everyone would be so good about it. I dont mean that i think all milk has real high pus in it as much as the rules allow but i certianly believe its in there.

Lol and with many years handmilking goats i know about udders and illness and injury to them a good bit.
 
My cousin refused to drink milk because she worked on a dairy that allowed a lot of blood into it.
They certainly can't all be like that, so I think it's really a matter of who is running things.
 
I try not to watch scary documentaries - glad I missed that one! I'm a little grossed out right now about milk pus lol, even though I'm sure it's doesn't happen everywhere! Now I'm glad that I'm lactose intolerant and use coconut milk instead! :lol:
 
I once milked 180 cows 2x/day I had to fix the milking equip when I first went to work there ,because it was causing sore teats, and mastitus, -- once the equip was fixed-and proper sanitation implemented, - the problem went away -but when I started there ,there was a huge problem and the milk was definatly "tainted" with all kinds of bad things. and-- obviously no one had bothered to take care of a major problem on that dairy for years.
 
Yup. And all the milk gets put together and processed. So if nine farmers are good and clean etc send in their milk.. one farmer isnt and their milk all goes into the same tank.
... But, yanno, nobody worry about it because they boil it and churn it and force it through teeeeeeeeny holes so you dont have to shake the jug to mix the cream back in.. so its safe.. not that they took out the nasties, but its sterile!

....anyway.. sorry for thread hijack **blush**
