You can really breed anything to anything, just the results sometimes aren't good. Cali x NZ are the most common meat crosses I find around here.
 
Yes. Crossing calis with NZWs is supposed to make a really nice meat rabbit to put in the freezer.
 
That is a very common cross and it can be done either way with buck and doe. The only thing you have to be careful of is breeding a significantly small doe/breed to a significantly large buck/breed. Not sure of the cut off of size difference, but more like a florida white doe to a flemish giant buck might not be so good.
