I live in North Carolina and it is and has been hot down here. I have got my rabbits for meat. My son heard that you do not want to butcher your rabbits in the summer when it is hot. Is there any reason why you can't do this in the summer time if you do it quickly and don't leave them out in the heat.

I think he is thinking about wild rabbits and tularemia, etc. Domestic rabbits that are raised in cages off the ground can be butchered at any time of the year.
 
Before refrigeration it was a bad idea to butcher anything in the summer unless it was immediately cooked
