So with eight in our nest box, we stick our hand in to do a welfare check and they start going nuts.

They're growing, momma is going in and out of the nest, but my first litter was a singleton who was overeating lol. These guys act like they're starving and feel (and look) like a churning ocean. Is that normal? (I just want to verify) lol
 
Weigh them there probly fine.
When I raised New Zealand whites they grew and ate like ravenous leeches at 3weeks they were eating 1lbs of food and a half gallon of water every 12 hours (also why I dont grow them now)
 
It sounds pretty normal to me. When you do the nest check, they think momma is coming to feed them. That's why they get so active.

If you are worried, take them out one at a time and check their bellies. If they look like they've swallowed a grape, they're being well fed. Here's a thread that should be helpful:
