Protein values will change, depending on the mix. I do know that if you sprout it, you will have more protein than the original grain, but I don't know how much. Wheat is around 12%, I believe, not sure about lentils. Sprouted wheat should get to 16% pretty easily, maybe even higher.

you should seed 1lb per square foot of tray. 11" by 22" should have about 2 lbs. The seeds should not be more than 1/2" deep.
