I made this rabbit stew recipe with red wine: http://www.foodnetwork.com/recipes/robe ... index.html

The Merlot that I used (just what happened to be open...) was pretty strong. The rabbit was okay, but the wine kind of overpowered the rest of the flavors -- and that's even with 3:1 water to wine rather than the 3:2 the recipe calls for!

Does anyone have suggestions for a different wine if I try this again?

Try with a Pinot Noir...

I don't cook with wine because it is expensive here, even for the cheaper types. I like to use apple juice for cooking meat. I don't cook from recipes much and I don't usually measure, but I'd say one part apple juice to three parts water.
