Ok, so we jumped fully in to this thing, we built the colony, and got the bunnies (x8), without even knowing if we were going to enjoy eating them! LOL. But i was determined! And when I have my mind set on something there is no stopping me!!! (I am currently building an incubator, so we can put quail in our chicken coop, once we move the buns over to their colony.)

So tonight I made Rabbit Pie...... and EVERYONE loved it!!! The rabbit was an old guy (2yo) so I assume that if we like it that much, it can only get better! So relieved because i was really nervous my family wouldn't like it.

Old rabbits can be tough so just wait til you have some tender, TENDER little fryers to eat!!!! ;)

So glad it's working out well for you!!! And there's SO MANY recipes and ways to cook rabbits!!! Remember, any recipe you already have for CHICKEN...will work with rabbit! :) Forget fried chicken, I love me some fried rabbit!!!!

Though by far the best I've had was a BBQ pulled rabbit sandwich I bought at a rabbit show...the local 4H group was trying to raise money for their club, so they all gave their culls for BBQ and sold lunches...it was THE BEST. Pulled pork is usually my fav thing, but now I can't eat it...it isn't as good as pulled rabbit!!! Both my dad and that 4H group said the secret is to use Sweet Baby Ray BBQ sauce when making pulled rabbit. ;)

Yay! Don't you love it when a plan comes together? My family wasn't sure about eating rabbit either, but after just a few meals they don't protest. It's just one more thing we eat. They even asked for the rabbit Alfredo I made tonite. Even the girl child, who swore she wouldn't, eats it willingly and a LOT. I'm glad your family loves it. that makes all your effort so worth it. I can't wait for colder weather for rabbit and dumplings!
 
I really got a chuckle out of what you said about raising the rabbits and not even knowing if your family will like it. I am doing the EXACT same thing! :lol: :lol: :lol: I will be butchering my first liter next weekend. Congrats on your first successful meal for your family. :)

I too started raising rabbits for meat without knowing if we would like it. We had eaten a wild cottontail once, and enjoyed that, so I felt it was a good bet.

However, a friend of mine was really surprised that I went through with it. We had sheep once, and ended up taking them to auction because they weren't butchered young and would have been mutton. The meat chickens were a bust as well... she thought it would be another case of good intentions that ended up with more animals to add to my personal "petting zoo". :roll:

Now we eat rabbit about twice a week, and we love it. :)

In addition to soups, stews, Alfredo, or chili, older rabbits also make good tacos, burritos, or enchiladas. I boil the carcass and then pull the meat off, and in the case of tacos or burritos, we then chop it and put it in a skillet and smother in Pace Picante sauce and simmer for a bit. Boil down the broth and use it to make your Spanish rice- the flavor is incredible! :p

Pulled rabbit sandwiches are yummy, too. It sounds weird, but I found a recipe online for pulled pork sandwiches where you top the meat with coleslaw, and that was really tasty. :)
 
Rabbit is my favorite white meat! I prefer to butcher mine closer to 16 weeks when they are 7-8 pounds live, making 4 to 4.5 pound dressed rabbit. If you age them in the fridge for about 5 days they are tender, juicy and delicious with nice meaty quarters. One rabbit at this size easily feeds 4 people.

The young fryers (10 to 14 weeks) can be thrown right on the BBQ grill.

A trick I have learned is to leave the kidneys in when you dress your rabbit. All the wonderful leaf lard (low-density abdominal fat) stays attached to the kidney and flank. When you roast or grill a rabbit with this extra 'juice' on the inside it adds a juicier, deeper flavor - more like chicken. When I quarter rabbits for a stovetop dish like rabbit curry or rabbit stew, I put the kidney and fat in the dish. I eat the kidneys, but they can also be removed for those who are picky about organ meat.

Some spices I have found that do very well on rabbit:
Sweet Italian spices: fennel, basil, thyme
Cavendar's Greek Seasoning
Thai red curry (comes as a paste in small jars)
Rosemary, Salt, Black Pepper and Garlic
 
Rabbit is great! Sent 9 the freezer camp this weekend and 2 right to the BBQ. Cooked up with a honey musterard sause, fresh vegs and patatos. A little red wine good time at the house.
 
I love the way rabbit smells when it's cooking. Rabbit pie is so good!
Yesterday for supper we had pulled rabbit spaghetti with garlic bread.
