1) 3-4 back legs, coat with flour and brown in skillet
2) Remove meat from skillet, put in pot and cover 3/4 with water, bring to boil
3) Add oil to skillet, add flour and cook on med til browned
4) Add stock from pot with meat and stir until mixed, 1 large thinly sliced
onion, 2 cloves garlic and salt to taste.
5) Add any spice you want, I used Herbs d'Provence (poultry mix)
6) When onions are clear and sauce is thick and bubbly, add to pot with meat and
stock, stir well.
7) Cook on medium until tender, I left mine about 1.5 hrs
8) Meat comes off the bone easy-peasy and serve with rice, noodles or potato.
