The processor is working with USDA on getting all of the paperwork in order.
Unfortunately, this is an agonizingly slow process.
However, with my working so close with the chef's and their subsequent visit,
the state inspector is granting me and my buyer/turned/agent an exemption
for processing and selling directly to the businesses. "Until" the processor is
up and running. Then, we'll switch back to the standard format we've been
using for the past couple of years.
The fact that the video my friend and I made was the standard used in
writing the protocols' for USDA made a huge difference in the decision
handed down only this morning. The state inspector viewed the video
and was quite impressed.
Now...........if I can just get this dad-blamed finger to heal quicker, I'll be
a "Happy-Camper!!" I just got an order for 20 processed rabbits due
a week from this coming Friday. It helps that I've got 52 head ready for
the freezer right now. AND about 75 head coming up quick.
I suppose I should start breeding some does....LOL
