Yesterday we processed four 5 lb buns at 12 wks old. Nice fatty buns, and we explored all the innards for signs of parasites or disease. There was some discussion earlier if we might have a parasite problem :x Saw no sign of anything strange, beautiful livers and organs. I did save the kidneys this time *gulp I'm going to be brave and try them. Bone in weight without organs was 2 3/4 lbs. So happy :clap:
So how does one cook kidneys for the first try anyway? :popcorn:

Congratulations! That's one of the bonuses of breeding rabbits for meat- you know your herd "inside and out"! :p

I just cut the kidneys in two, slice the liver and saute in real butter until just done. You can also add the hearts, but they will be chewy. For best flavour, do not overcook. Season with salt and pepper and serve. I like a salad or sliced tomatoes with mine and maybe some homemade bread.

There are lots of ways to cook them, I am sure, but simple and tasty works for me. :)
 
Awesome! I love the liver and hearts, was hoping kidneys might be similar :) Will give it a go.
The back leg meat and loins were just HUGE on these buns. Hubby and I were so happy, lol I just had to share :oops:
 
I tried eating the kidneys, but I just can't stand them. :) I gave them to my chickens, but now I have a friend who nearly cried when I told him what I was doing - he's getting them now. :lol:
 
I slice hearts in two, kidneys into four pieces, dice the fat round the kidneys and cut livers into slices, toss it all in seasoned flour and fry till golden brown.

Then pour off fat and make gravy with the drippings (with milk) and serve.

OMG its not only gooooood but its what we had for dinner! :lol:
