I have boiled a couple of rabbits to make rabbit spaghetti and green enchiladas. Both times the boiled rabbit tasted more like roasted Turkey than boiled chicken. That's fine by me, I like Turkey more than chicken anyway. I'm just wondering what causes the difference in flavor. Is the feed I'm giving them, the breed of rabbit, or just the cooking method. I didn't notice as much if a turkey flavor with other cooking methods, but that could be due to seasonings I used.

Any ideas?

BTW, the enchiladas were fabulous!

I think it's a personal thing. When I eat rabbit, it tastes to me like good white-meat chicken with none of the mealy-ness or dryness of a chicken breast...but my friend G., eating the same meal, claims it's like dark meat turkey. :)
