So I had a rabbit that was just a terrible mother and pet. I couldn't stand her. She would lunge at you whether she was pregnant or not. She would run to the corner of her cage all the time when we would come out and feed/water her. This isn't one of those cases where you go, "Oh, she's just not warmed up, she's just not used to the place," etc. She had been here for over 5 months. She had also been give a chance with 2 litters, would have been more if I had actually liked her. The first litter she had she didn't really make too great of a nest but she tried and we figured that was her first litter. She had 6 kits and 4 died because she didn't feed them or she crushed them or she let them freeze. We took the other 2 out and had them foster with a good mom. Her second litter she didn't even bother with making a nest or pulling hair. She just birthed all of them in the nesting box and let them freeze to the bottom. End of story.
So yesterday I went out and killed her and put her in the pressure cooker for 1 hour in some red wine and vinegar. The whole day before I put some cut carrots, onions, 1 can of chicken broth, 1 can of Cream of Mushroom soup, red pepper flakes, corn, potatoes, Bay leaves, made some gravy to thicken it up and let it simmer all day and night. After the rabbit had been in the pressure cooker for an hour I took it out and the meat just melted off the bones. I shredded it a bit with 2 forks, put it in the crock pot with all the other ingredients and let it simmer for another hour. My wife made some homemade rolls and we scarfed it down.
That was the tastiest rabbit I have ever eaten. Like the title says, she was terrible in life but tasty in death. I'm glad she could give us some happiness :chef: :dinner:
