Just made a fryer into some soup in the crockpot. I cooked the rabbit whole with a can of rotel and about half a cup of picante and taco seasoning. I would turn it occasionally. Later I added some onion and red bell pepper. When the meat was falling off the bone, I took it out to debone. I added a can of black beans, some frozen corn, a diced avocado, and rice. I poured enough chicken broth to make it "soupy" and put the rabbit meat back in. When the rice was cooked, I served with tortilla chips, shredded cheese, and sour cream. It was sooo good and fairly healthy. My daughter said it was her favorite meal with rabbit so far.
