Just made a fryer into some soup in the crockpot. I cooked the rabbit whole with a can of rotel and about half a cup of picante and taco seasoning. I would turn it occasionally. Later I added some onion and red bell pepper. When the meat was falling off the bone, I took it out to debone. I added a can of black beans, some frozen corn, a diced avocado, and rice. I poured enough chicken broth to make it "soupy" and put the rabbit meat back in. When the rice was cooked, I served with tortilla chips, shredded cheese, and sour cream. It was sooo good and fairly healthy. My daughter said it was her favorite meal with rabbit so far.
 
Forgot to mention I poured about a half a nasty beer in to start. My husband had bought some weird beer that we didn't like, so I was trying to make use of it somehow.
