Some long hair butts have dried poop. Should I just leave them if they are just small areas? I assume it's stressful for the rabbit if I try to clean it.

Clean them. It's not overly stressful for them. Do they get bugged cause you are handling them? Some bunnies yet. But a good pair of scissors makes quick work of dried poop on furn coats. Washing their butt ends is easy enough too for the harder to get off spots. A wee bit of stress is WAY better than sores from poopiness.
