I am pleased to report that the "Salsa Chicken" recipe in "Not Your Mother's Slow Cooker Cookbook" works perfectly fine with rabbit!
I used the saddle and hind legs from two medium sized meat mutts -- about 2.75 lbs bone-in.
Arrange it in the crock pot and pour 1 1/2 cups of your favorite chunky salsa over it. Cook on high for a few hours or on low for longer, until it's tender.
At the end, add 1 tsp cumin, a pinch of cayenne pepper and 4 Tbsp fresh lime juice.
Take the rabbit pieces out to cool a bit, debone and shred the meat, and add it back to the salsa mixture.
This is great served over rice, in burritos, on tostadas, or use it as the meat in these baked taquitos:
