This is good for a tough older rabbit :) Just made it tonight. usually use turkey or chicken. It was great with rabbit.

Boil up rabbit (with whatever veggies you want.) till meat is falling off bone. De-bone and shred. Discard veggies. (or eat them) Save some broth.

12 oz. Spaghetti
2 cans cream of celery
2 cans cream of chicken
1 med to large rabbit shredded
1/2 cup romano cheese
1/2 cup cooking sherry
1 cup broth
1 can mushrooms
1 can diced olives
Parmesan for top

Boil noodles in 3qt. pot till tender while mixing soups & other ingredients ( liquid to solid ) in 4 qt. dutch oven.
Once noodles are to desired softness drain & add to soup mix. Spray 13x9 baking pan & place noodle & soup mixture in baking pan. Cover with thin layer of Parmesan cheese & bake at 350 degrees for 1/2 hour till golden & bubbly.

What I usually do with my older ones is slow cook in crock pot or pressure cook. Makes the meat really tender, then I debone/shred just as you did. We had Bunny-Q sandwiches this weekend...YUMMO!

You could probably just cook it in the crock pot, debone, shred, and freeze for later dishes like the Tetrazzini and BBQ sandwiches.
