I mostly followed this recipe. I cut it in half because I only had one rabbit. I also defrosted the wrong rabbit. I had a whole deboned one and the one I defrosted was deboned, but in pieces. A little bit of mallet work thinned out the hind quarters and loins and made them wide and long enough to wrap around the filling. I didn't make the roasted peppers to go with it, but I think they would have countered the parmesan cheese nicely (it was a little too pamesany for my tastes).
Oh, and make sure to make the gravy that goes with it! That was really yummy!
