Rabbit liver (and hearts and kidneys) stroganoff (sp?)

This is really really good!

Gently fry sliced rabbit livers, hearts and kidneys in butter and garlic until just done. About 8 to 10 min is all it takes.

It may seem silly to slice something as small as a rabbit heart in half or a kidney that small in thirds but trust me, they cook better and the heart cant explode spraying molten butter at you if its cut in half.

Ask me how I know this :lol:

Then take a can of cream of mushroom soup and add it to the pan. Thin it down a bit with either rabbit or chicken stock or a bit of milk.

Then add three nice big spoonfulls of sour cream.

Stir it all together and heat through.

Serve over mashed potatoes or pasta.

OMG it is SOOOOOO GOOOOD!!!

Even my kids who dont like liver wolf this down and ask for more :cool:

Mmm, sounds great! I recently made a dish with lamb heart, liver and kidney...it would have tasted wonderful, except I think the recipe accidently doubled or tripled the necessary amount of vinegar called for... :x

I only had the livers, hearts and kidneys from two rabbits but it really needed more, like double.

Rabbits is YUMMY!
 
I have been wondering what to do with the organs- I'm not keen on eating them, to tell the truth. I remember enjoying breaded and fried chicken giblets from a chicken fast food place years ago, but haven't been able to bring myself to try rabbit "giblets" yet.

Oh nooooo, please stop denying yourself the best parts of the rabbit! It can be hard if you are not use to organ meat but trust me, you will be glad you tried them.
 
I like to make paté out of the livers. It's very mild liver flavor and my whole family loves paté sandwiches.

1 lb. rabbit livers
1 small onion, diced
1/3 C. apple juice
1 clove garlic
4 Tbls. butter

Sauté the onion and garlic in 1 Tbl butter until onion is soft. Add livers and apple juice, cover pot and cook over medium heat until liver is cooked through. Put contents of pot into a food processor and blend until smooth, add salt to taste and remaining 3 Tbls. butter.

Put paté in a covered glass container until cooled. The mixture will be the consistency of peanut butter when cooled.

Great on sandwiches, crackers or just eat it with a spoon!

It is SUCH a shame that rabbits only have one liver! Am now spoilt for choice as to what to do with them. Its like rabbit belly jerky, its gone so fast :(
 
MSD, you absolutely owe it to yourself to try rabbit giblets. Rabbit liver is like no other kind... It's the liver-hater's liver. ;) What's the worst that can happen? Even if you all hate it, it will make an awesome treat for your canine crew.

It's true. Even my wife who has battled me for 5 years on eating livers will stomach this liver.

And why didn't you post this yesterday! I just had strogganoff and now I have to make it again.
