Protein adjustments, sprouted grains vs fodder

1. Protein: I may be acquiring a French angora. I'm told that fiber rabbits need higher protein than others. I don't think I could find a 18% rabbit pellet even if I was willing to have two different pellets on hand. My Silver Foxes get 16% pellets+fodder/forage when available (see next question). So, can I up the protein by using sprouted lentils or ??? what will provide sufficient protein to get good fiber?

2. Sprouted grain vs fodder: my fodder experiment is into trial #2. This time, using trays I have made out of plastic needlepoint canvas to allow for sufficient drainage. I'm still getting very good germination but not so good on the "grow to grass" phase. So, if it turns out my house is too cold for wheat to grow to grass, I may just sprout and feed. I can't get barley so other than that, what grains would you recommend blending with the wheat I have for sprouted grains? Would lentils be a good addition? Anyone know approximate protein % for particular combinations of grains sprouted?
 
Protein values will change, depending on the mix. I do know that if you sprout it, you will have more protein than the original grain, but I don't know how much. Wheat is around 12%, I believe, not sure about lentils. Sprouted wheat should get to 16% pretty easily, maybe even higher.
