So I'm thinking that this rabbit was heavily inbred because she's kind of.. well 'special' and she had a litter "we didn't breed her, she came to us pregnant" and now she only has 3 babies left out of a litter of 7... They get real skinny and then theyre heads are too big and they die. Should I put them down or give them a fighting chance..?

Sounds like she is not producing milk
If her teats seen full then she may not know what to do or be too stressed toIf her teats seen full then she may not know what to do or be too stressed to care for them (you mentioned you'd only had her a week)
Personally I'd cull them rather than let them slowly starve
