ONE rabbit for 5 people

Any idea what I can do with ONE rabbit for five people? I'd say the rabbit was about 5lb before butchering, and about 12 weeks old. (OneAcreFarm, can you help me out with more precise info? This is the rabbit we butchered early last summer.)

We like rabbit tacos. I usually simmer the rabbit (or pieces) in water, let cool enough to handle and shred the meat, then put in a skillet and cover with Pace picante sauce and simmer for about half an hour or more. Serve with chopped cilantro, onions, and cheese on either soft or hard taco shells. You can add lettuce, olives, sour cream, guacamole, or whatever else you like if you want to get fancy, but they are good with just the three ingredients I mentioned.

Hubs usually eats 4-6 chicken tacos, but eats only 2-4 rabbit. A little goes a long way. :)

We make our own tortilla chips at the same time we are cooking the shells.
 
I made a rabbit stew the other day with one rabbit, baby carrots, baby potatoes, celery, onion, rutabaga and such. It was so good and made enough for two meals for my family of 5.

LOL! I haven't forgotten it, just didn't know what to do with it that would be enough for the whole family. Didn't think to ask here before today. :roll:

Crockpot rabbit pot pie. Debone, toss in with cream of mushroom and cream of chicken soup, cup of milk, potatoes, veggies etc. Cook till everything is tender and done. Get some cresent rolls, lay them out flat on a baking sheet, poke with fork and sprinkle with cheese. Bake till golden brown and delicious. Serve "filling" in a bowl with 2 or 3 "crusts" on the side.

Rabbit and dumplings, Rabbit Noodle Soup, Bunny-Q Sandwiches, Sloppy Hoppies, there are all kinds of meals to be made with one rabbit. YOu can crock pot, debone and make Rabbit Enchiladas, or anything you can make with chicken. And rabbit meat is more dense than chicken, so you will eat less of it.

Sorry to revive an old topic, but I was planning on doing this on Sunday. Do you debone raw then just chunk the pieces in or cook the rabbit bone-in?
 
An internet friend from another forum got some rabbits a couple weks ago, and dispatched tof reezer camp. She e-mailed me for recipes, I sent her here-- she indicated the rabbit was delicious, and now, the hubby agrees she can raise some!!!

The way to a man's permission is over his taste buds..
