Japanese onion soup?

I have a pan of lovely rabbit stock and I was wondering if anyone has ever made that soup that comes at the beginning of a meal at Japanese steak houses out of rabbit stock?

Hints or tips if you have please ;)

Mmmmmm my computer is getting dribbled on again :oops: but rabbit stock is just sooooo flavorful!

I like to reduce it really hard until its really strong and then thicken it with flour as gravy.

But that onion soup, it just is calling my name tonight!
 
You can buy little tubs of Miso Paste at most health food stores- you just add it to liquid to make the "soup". Cube up a little soft or medium tofu, thinly slice your onions, and you are good to go. :)

When we have miso paste I sometimes boil some water in the morning, add some miso, and drink it. YUM!
 
They serve it with very thinly sliced green onions here.

I've never had seaweed in miso soup! I've been swindled! :evil:
 
My favorite Japanese restaurant also has the best tempura ice cream, either cocoanut or green tea both amazing.
