Has anyone tried using the intestines? I know they used to be common to use as sausage casing, but not so much anymore. I would love to make rabbit sausage at some point, and if I could use the intestines as well instead of just tossing them to the dogs, that would be wonderful. The problem is I have no idea if they would even taste good, how to prepare them properly, how to clean them, anything. So, anyone have any experience with this and some advice to give?

Gently press out the contents and then run water through the intestines until it comes through nice and clean.

Then put them in a container and dump in LOTS of plain salt to preserve them.

When you wnat to use any just soak in cold fresh water.

Easy peasy!

Great idea!!! I'm excited to make rabbit sausage!
