I have always wanted to grow sweet potatoes, but have been unsuccessful with the grocery-store bought ones, even though they do develop sprouts and small leaves, so haven't been sprayed with an inhibitor.

Maybe I'll try again!
 
In the Phillipines, and probably some other countries, sweet potatos are raised more for the greens than the tubers.
 
My wife and I eat the greens from our sweet potatoes in salads, stir fry, and in blender smoothies. (Google "sweet potato greens recipes")

Our rabbits love the leaves and stems. As do all the deer in the area.

This year we have added a row of Japanese sweet potatoes. We planted a couple of the potatoes in pots, then cut the sprouts (slips) off and planted those. The leaves are a darker green than the regular sweet potatoes we plant, and taste better raw.

I bookmarked this article, since I love sweet potatoes and plan to keep a LOT on my future farm. Having a great way to make use of the whole plant makes them even more attractive. :) Thank you for sharing the link, I really enjoyed it!!!
 
I found a bunch of sprouting rutabagas at my local Food World, and bought 3 that were obviously too small and "past prime" for eating the roots, for 56 cents, and they are now getting bigger in my kitchen window. Now I am going looking for sweet potatoes! Nice to know the greens are edible for humans as well as rabbits. Thanks to all of you!
