ground venison uses?

With the deer we got last year the freezer is just packed with ground venison. We really don't have any ideas what to do with it. Every now and then we make loose meat burgers (I prefer them over patties) and we are thinking we could jut use venison with the same spices instead of beef. We don't eat burgers that often though. Maybe once a month max. If my friend ever answers me I was thinking of taking 8-10lbs to her instead of making it in to dog treats. That still leaves us with like 20lbs of the stuff. :lol: Any ideas what to use it for? I'd like it gone by the time the roasts and steaks are so I can order a side of elk. My husband kinda hates cooking venison steaks though so not sure how long that will take to use up. The roasts are going fast because they are so easy to cook. We just throw them in a crockpot with a bacon recipe we found online and then dump some potatos in for the last hour.
 
Hmm.. Josh does have a meatloaf recipe that's pretty good but time consuming. Don't really like meat balls or goulash but I've never tried it with venison so it may just be my unenthusiastic opinion of store bought beef my mom would use. I'm debating trying some grass fed nearly organic beef. He's working on getting certified and has his pastures and hay certified organic so far.
 
ooo chili. I haven't had that since I lived with my mom which is like 10 years ago. I don't generally order it at restaurants because I'm not thrilled with beans, I think it's the texture, but I do like the flavors they are cooked in like chili and sweet baked beans. Maybe I'll call my mom and ask her recipe because while she isn't a very good cook that was pretty good and heavy on the meat more than the beans. It might be from her very old recipe box my great grandma gave her. I want to steal that.... :p:

I substitute rabbit for these dishes as well since most of my family don't like the idea of eating rabbit and ignorance is bliss.

You can use venison in any beef recipe. Mom always says the key to it is garlic and onion (powder or fresh) and cook it slower.
 
Anything you make with ground beef you can use ground venison as a substitute. My family does not buy any beef. We eat venison all year. I process all of our meat. The steaks can be cut into 1/4" slices rolled in flour, egg and cracker crumbs then fried till golden brown on each side. That is a favorite of many hunters in this area. We use ground venison in Hamburger Helper, chili, meatballs, hamburgers, sloppy does, spaghetti, tacos, enchiladas, meatloaf etc. We make our own breakfast sausage, hot dogs, polish sausages, summer sausage, jerky. Venison is good for you because it is a lean meat.
 
I don't use ground beef. I don't really like beef. The odd properly seasoned steak of which we buy one large one and my husband slices a strip off it for me and a loose meat hamburger once a month is it. We do have a potato and ground sausage soup we like to make when we have time but the venison might be a little plain for that. Usually we get mild italian sausage and add a tiny bit of red pepper. I mostly eat salmon. Probably every other supper we make is baked salmon and japanese rice. Just picked up salmon pinwheels from the co-op for tonight. Usually a chicken fajita once a week. A roast lasts 2-3 days once or twice a month. Meat loaf a couple times a year. A ham will last a week about once a year.

Lunch is eggs and goat cheese, a fruit smoothie, canned soup, macaroni and cheese, a muffin if I didn't eat that for breakfast... Not really any meat. I also make a lot of breads using premixed packages from the amish area bakery. I have 4 loaf pans. Aime the chinchilla and I ate 2 slices of sweet bread with raw honey brushed on the top for lunch today. She got bites off the end without honey.
 
I'm sure if you don't want to use the venison you may have some friends that would like to have some extra meat. you can also check with any soup kitchens/homeless shelters to see if they have a need for some venison.
 
I usually make sausage with everything other than the backstrap .... 50/50 with a wild hog to give it some fat content , ground , seasoned , sheep casings & smoked with pecan. Usually have family members begging for it so I never have enough.
 
We usually grind a whole older doe every year for our meat...I can't imagine living without it-LOL! We use it in place of beef for all our red meat meals. I have also started canning the ground meat to leave more room in the freezers for the steaks, roasts, etc from younger deer.
 
I like to mix ground venison with ground beef. I get the 80/20 ground beef and mix 1:1 with the venison. It makes the beef taste better and it's leaner than the store bought beef.

I generally use it in chili, lasagna or pasta dishes.

If you don't like ground beef, you probably won't like ground venison though.
 
I'm fine with venison, elk, and buffalo in pretty much any form. Love buffalo probably the most. It's just so hard to find here and expensive. There's one buffalo farm and he had some issues with his stock 2 years back that he hasn't completely gotten back up to full production yet. We get elk sticks and burgers from a yearly event in southern IA where there are 4 or 5 elk farms so I'm thinking of getting a side of elk when our venison is gone.

I hate lamb and duck(expensive discovery at a restaurant after hearing how tasty it supposedly was). Chicken and turkey is ok in certain forms. Not a huge fan of turkey but turkey loaf and the giant legs we get at the fair are good. The dogs still get quite a bit of turkey based meals. Some pork is edible like ham and mild sausage.
