We tried a Jamie Oliver rabbit recipe tonight:

It's a marinade of fresh rosemary, thyme and garlic ground to a paste, plus lemon and olive oil. The belly flaps are layered with pancetta and skewered. He even has you skewer the liver and kidneys, though we did not.
It was really good! This is the first time that DH has gnawed all the meat off the leg bone. Usually he just picks at the legs and goes for the loin.
