We had our first 2 rabbits for dinner last night! they were draped in bacon (from the farm where we purchased the breeder doe) and stuffed with water chestnuts. served with carrots, a Pino Noir and sage sauce (looked a lil funky but tasted great) and home baked bread.
the backstrap meat filled 3 of us, and DH ate one hind leg- weve got plenty of leftovers and will probably leave rib and front leg meat for the stock.
Just barely sweet, very tender, and we are proud!
