Can you breed out a mix in a pedigree so that eventually there is a pure? Just random thoughts so I thought I should ask.

In theory yes, but recessive genes are tricky, and you may find a lot of strange things pop up later in subsequent breedings.

So does a rabbit have to be a certain percentage of one breed to be considered pure on a pedigree? Or is it just by looks at that point if there is no history?

A 3 generation pedigree of one breed and no DQs are required for registering a rabbit as a specific breed. You can however show and sell a rabbit as any breed it looks like. Most though will not buy a rabbit for anything but meat purposes if it doesn't have at least a 3 generation pedigree of one breed and most show people I've dealt with prefer 5 generations.
