Since you are posting here, I can just critique from the forum instead of via e-mail. If you can though, it would be helpful to post the other pics that you sent as well because they show their heads more, etc.
I hope you don't get discouraged from this, but I would honestly consider both of them to be pet quality. That doesn't mean they can't make great pets or that you can't still try a BEW project, but I would probably try to find a better typed doe for something like this since the buck is carrying the color you want to work with.
For the doe's head picture, she looks to be narrow between the eyes/muzzle. I'm not sure about her crown with the hand and the oil because one of the ears in the first pic looks to be laying back some. She isn't posed quite right (but not bad for first tries!), though even so she appears to lack overall balance and is long in the body. Her shoulder looks long and low also while further back she appears to be sloped and undercut. I'm sorry to hear she came with ear mites also, but her steel coat looks to have lots of pretty gold ticking and I'm sure she is a sweetie.
The buck looks to have a slipped crown in the other pics and that would account for the ear carriage you mentioned in the e-mail. His shoulder still looks long, though he seems to have better overall balance than the doe. His HQ looks pinched and he is long in the body, too. You will want to weigh him when he is a senior (I am not sure how old he is) so you know what you are dealing with size-wise, since the one I saw was ~4lbs and the ideal Mini Lop senior buck weight is 6lbs.

If it were me, I would probably keep the doe as a pet or would pet her out to someone. Since you were already planning to go to a Spring show, I would see if I could pick up the best doe or two you can afford (while avoiding the no-no colors for a BEW project) and breed them both to your BEW. Since he doesn't have a pedigree anyway, you will be starting it with these breedings, so you will want to keep good records, keep the best that are produced, as those will be the basis for improving in your color project while you build a pedigree, etc. This will be a long term process, but in the end if you keep at it and do well, then you should have some beautiful BEW results later on.
