What is cream genetically? What genes do you need to create it?

Cream is a dilute Orange. In breeds where Orange does not exist, I'd describe it as a dilute Red/Fawn (fawn and red are the same in angoras.) A_B_C_ddee
You need an Agouti, carrying the wideband gene (Red or Fawn), with dilute, or a combinations of agouti, dilute and non extension with wideband.
