Best way to prepare an older rabbit

I have a 3 year old buck that I need to dispatch and was wondering if there are any reciepes that are better for older meat. I would assume it would need to be a crockpot kind of recipe.
Just looking for suggestions.

cook in the crock pot, debone,cover with BBQ sauce
and put on hambuger buns. along with a big side of cole slaw.
 
Oooooow it all sounds yummy! Rabbit and dumplings is good too. The other day we did home-made noodles. Yummmm!(noodles to some, others would call them flat dumplings) :)
 
1 Nice size rabbit cooked in the crook with seasoning, onions etc. Cool and debone. Place meat into a pot-----add 4 cups of the broth from the crock pot to that pot. Slice up a medium onion and slice up a pack of Hillshire smoked sausage and place in pot, bring pot to a boil, then add 2 cups of Uncle Bens rice, salt, stir. Put lid on and Reduce heat to very low and in about 5 minutes stir again---no more stiring---let cook slow till rice is done and flaky. Then Call me!!

Around here, those would be called "pastry"..as in "chicken & pastry" or "rabbit & pastry"...

Great on old or young rabbits. BBQ makes everything good. :D
 
We've done the BBQ sauce in the crockpot thing too, but another favorite is either tacos or enchiladas.

I usually quarter the rabbit and put it in a pot of water and boil until the meat can be shredded easily. We then put the meat in a skillet with some broth, cover with Pace Picante sauce and simmer for a bit for taco filling.

I reduce the broth and use it instead of water for the Spanish rice.
 
However you cook it, cook for a long time. I usually boil mine for about 3 hours. De-bone it then ( and this is the most important thing) cut it across the grain in short pieces. Old rabbit, though delicious, is stringy and you don't want to spend a half an hour picking it from between your teeth with a tooth pick.

You can then make a stew, pot pies, bar-b-que, or anything you want out of it. I usually cook mine with a large onion and a couple of teaspoons of thyme, or maybe some basil (less if you have fresh) salt, pepper, carrots, and even fresh peas if you have them.

Crock pot on high for 4hrs, or low for 8hrs. Debone and chop across the grain. Use for anything you would use chicken for.
