I was reading through some older posts - don't want to hijack a thread. @KelleyBee you said you cleared out your freezer by canning meat, but didn't want to can the vegs. I'm thinking along the same lines. I bought a dehydrator and have been dehydrating any fresh vegs that we aren't going to eat in time. Also buying the giant bags of organic carrots at Sams Club and dehydrating them. Dehydrated some garlic - LOVE IT - I just sliced up the cloves, not powdered like you purchase. Actually I bought the machine to store the tons of eggs we had last summer, so I made my own powdered eggs LOL

Have you thought of trying a dehydrator?

I have been dehydrating for years, long before I started canning (which was in 2021). What machine are you using to store your eggs? I’ve started glassing eggs for long term storage (good up to 2 years).

I just put them in mylar bags in a dark place. Cool-ish but it's really hot here and we don't always run the air. Hope the eggs survive. We still have a surplus so I haven't eaten any yet. I used to have a really good book called "Home Preserving Made Easy" - I hope I still have it, we got rid of 90% of our belongings when we moved into our 19' travel trailer with high hopes of travel LOL ... It might be in our storage container in our ~50 boxes of books hahaha

The dehydrator I have is this one - With the coupon, it's only $129 which is just about what I paid for it a year ago. It has 8 stainless steel racks and it does a really good job, I'm very happy with it - I've dried everything from meat & eggs to fruit, onions, etc. Lots of Sam's bags of organic carrots LOL. If anyone gets one, you CAN change to F temp, just hold the C/F button down. Amazon has banned me from answering questions, or making any comments and reviews because they don't like what I said LOL.

I glass eggs. They are said to last this way up to 2 years.
