going from whole to ground - tips?

Agreed, I use a little water to help disperse the seasoning. It makes it a lot easier to send through the sausage stuffer too when making links. If you don't know about it here's a great site for all things meat: https://meatgistics.waltonsinc.com/

    Growing Herbs for Rabbits

Red Russian Kale and Cilantro take up a good bit of space in my garden. The rabbits and the ducks love it. :bunnyhop: :feed-ducks: If you cut them above the ground with a serrated knife it grows back in a few weeks just like spinach.

    OMG

If nothing else get a good "game camera" with night vision, no flash and hide it in sight range. With just a little ambient light they really can take very good pictures at night.

this week in the kitchen, ...so far

I haven't had the best garden this year but we did ok. Put up 80 pints of green beans to get started. 17 quarts of tomatoes and 14 quarts of spaghetti sauce with home made Italian sausage, yum. Went to the neighbors field and gleaned a 1/2 bushel of acorn squash and another of butternut. They...

    Man it's HOT!!!

Sorry, didn't mean to send it your way but that's the way our weather works doesn't it? Only 102 yesterday and they "say" only 89 today but with severe thunderstorms likely. That's ok, we need the rain just not the hail.

    Man it's HOT!!!

105* today and more on the way. (38C for you northerners.) I'm getting to old for this nonsense. Friday: Sunny and hot, with a high near 105. West northwest wind around 5 mph becoming calm. High: 105 °F Now you know why my rabbits live in my cooled shop!

    Another store closing.

Ya know, funny thing is they said catalog shopping ( Montgomery Wards, Sears etc.in the 60's) would kill the local stores. They were the predecessors of big box stores that meant doom to the little guy. Kind of like the net is now. Best Buy, Kmart, Ace Hardware, even Wally Worlds prices are...

    Another store closing.

They closed the Sears here! Their prices were climbing every time I went in. It use to be a very good store with lots of deals. You could find about anything you needed but...Welcome to online shopping. :x

going from whole to ground - tips?

Sorry about that, I should have suggested Putting some fat in. I had the same experience the first time I made it too. I get fat scraps from my local butcher and put in 15% by weight. Makes all the difference in the world. I put all the seasoning I'm using in a batch on the fat and then send it...

going from whole to ground - tips?

Sounds like you're well on your way to cornering the sausage market Jessi. :) There are tons of seasoning mixes out there to try. Most contain enough to make 25# of goodness for about $4. Enjoy!

going from whole to ground - tips?

We have a Cuisinart stand mixer that gets used almost daily. Bought a meat grinder attachment for it and love it. Comes with 2 sizes of sausage stuffing tubes. I buy the casings at our local meat market but can be had online for less. Mixer is less than $300 and gave ~100 for the grinder...

Building a "canning Kitchen" in the dungeon.

Thanks Michael now I'm going to have to get off my duff and do what I've thought of for several years. I want to build mine outside. I do my canning there to keep the heat out of the house. Heat source is a turkey fryer burner. Seems like when it's time to put up crops here it's hot enough in...

    Maybe Getting Chickens! Advice?!

IMHO ducks are better than chickens. We have 6 Ancona ducks and they are a gas to watch. Yes they can make a mess out of anything but worth the cheap entertainment. We get 6 eggs every day, sometimes 7 or 8. :? Better tasting and fantastic to bake with. I use a mortar mixing tub for their...
