They do coarsen as they age, but I still use the wool from my 6 year old doe.

IMO I would cull a kit with that bad of an injury. You could take it to a vet, but as small as kits are I wouldn't be surprised if they suggested the same thing. I'm sorry for your experience and for the little one, but it's the most humane thing to do at this point. Again, this is my opinion...
